Ingredients:
1.35 cups water (approx. 320 ml / 10.82 oz) 2 tsp sugar (approx. 10 g / 0.35 oz) 2 tsp Instant yeast (approx. 6 g / 0.21 oz)
Mix and wait 10 minutes till frothy, then add: 1 tsp vinegar (approx. 5 ml / 0.17 oz) 1.5 tsp salt (approx. 7.5 g / 0.26 oz) 1.5 tbsp extra virgin olive oil (approx. 21 ml / 0.71 oz) 2 1/2 cups all-purpose flour (approx. 312 g / 10.58 oz)
Instructions:
Mix everything together in a bowl and then cover with plastic wrap and leave in a warm place for 30 minutes.
Give 5-10 folds to form a compact dough, cover, and leave to rise for an additional 30 minutes.
After 1 hour total, grease a large baking tray with extra virgin olive oil and tip the dough into the tray.
Stretch the dough to the edges in a baking tray using a spatula and cover. Let it rise for a further 30 minutes.
Add extra virgin olive oil, salt, and any toppings of choice. Spread across the surface. Dimple evenly with fingertips across the dough.
Leave to rise for a final 15 minutes.
Bake at 400°F (approx. 204°C) convection for 25 - 30 minutes, until golden. Rotate the pan halfway through for even cooking.
Take out of the oven and remove from the tray. Allow it to cool down on a rack for 10 minutes before cutting.
Enjoy!
